Tempeh (pronounced TEM-pay) is an Indonesian word that refers to a variety of fermented soybeans. The soybeans are bound together into compact cakes by a dense mycelium of fragrant white Rhizopus mold. The retention of the whole bean gives it a higher protein, fiber, and vitamin content.
